Zitella Cake in feast
On Wednesday, September 16, an event dedicated to taste and tradition will take place on Viale Matteotti in Milano Marittima.
The Torta della Zitella in Festa is back, an event entirely dedicated to the sweet symbol of the Sposalizio del Mare (Wedding of the Sea). Made with almond flour and pine nuts, sponge cake soaked in Alchermes liqueur and blackberry jam, the cake was created by students and teachers of the Tonino Guerra Hotel Management Institute in Cervia.
As tradition dictates, local bakeries will join forces to take on a new challenge: creating the longest cake possible!
At 8:00 pm, the official celebrations will begin with the cake-cutting ceremony, attended by representatives of the Cervia municipal administration.
All participants will then be able to purchase slices of the delicious cake, made according to the original recipe by Cervia’s bakeries: “I Doganieri”, “Forno Martini”, “Forno Zamagni”, “Panificio Stradaioli”, “Il Forno Giuliani” and “La Forneria di Emilio”.
For the occasion, Slow Food Valle Ossola will present Il Crescenzin, an ancient traditional bread from the Ossola Valley, made with rye flour and enriched with honey and walnuts. A humble bread in terms of ingredients, yet rich in history, flavour and identity.
